Indulging in a springtime treat doesn't have to mean compromising your health! These beautifully light waffles from Deliciously Ella are made with superfood ingredients, and a whole lot of love.

Recipe Ingredients

  • 200g porridge oats
  • 2 tablespoons chia seeds
  • 3 tablespoons maple syrup
  • 250ml almond milk
  • 50g buckwheat flour
  • Handful of fresh blueberries, about 20g
  • 1 tablespoon coconut oil, plus more for oiling

Recipe Method

Pre-heat a waffle iron. Once warm, add a little coconut oil to grease each waffle mould.

Place the porridge oats into a food processor and pulse until it becomes a fine powder. Once fine, add in the chia seeds, maple syrup, almond milk, buckwheat flour and coconut oil - pulse until it comes together to form a thick mixture. Once combined, stir through the blueberries.

Spoon equal amounts of the mixture into the waffle iron, smoothing out to ensure each mould is filled. Close the iron and cook for around 5-10 minutes until golden. Once cooked, remove the waffles and repeat until the mixture is finished.
